  • 15 oz great northern beans, rinsed and drained
  • 15 oz cannellini beans, rinsed and drained
  • 1/4 red onion, thinly sliced
  • 1 pint cherry tomatoes, halved
  • 1 1/2 cups dill pickles, sliced diagonally
  • 1/2 cup chopped fresh dill
  • 2 tbsp olive oil
  • 1 tbsp dill pickle juice
  • 1 tbsp fresh lemon juice
  • 1/2 tbsp lemon juice (additional)
  • 1 tsp red apple vinegar
  • 2 garlic cloves, minced
  • 1/4 tsp salt
  • 1/4 tsp sea salt
  • 1/8 tsp ground black pepper

Instructions

  1. Rinse and drain the great northern and cannellini beans.
  2. Thinly slice the red onion and halve the cherry tomatoes.
  3. Slice the dill pickles diagonally and chop fresh dill.
  4. In a large mixing bowl, combine beans, onion, tomatoes, pickles, and dill.
  5. In a small bowl, whisk together olive oil, dill pickle juice, lemon juice, minced garlic, salt, sea salt, and pepper.
  6. Pour the dressing over the salad mixture and toss gently until well-coated.
  7. Serve immediately or chill in the refrigerator for 30 minutes for enhanced flavors.
