2 tablespoons jalapeno juice (reserved from the jar)
1/2 cup almond flour
1 teaspoon cajun seasoning
3 eggs
2 cups ground beef rinds
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
Instructions
Drain the jalapenos and absorb excess moisture using paper towels.
Set up three bowls: combine almond flour, cajun seasoning, and salt in one; whisk eggs and reserved jalapeno juice in another; mix ground beef rinds, garlic powder, and cayenne in the last.
Dip each jalapeno slice in almond flour, then egg wash, and finally coat with the beef rind mixture.
Arrange coated jalapenos in the air fryer basket without overcrowding. Spray lightly with oil.
