  • 2 teaspoons vanilla extract

  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups shredded zucchini
  • Frosting: 6 tablespoons cocoa powder
  • 1/4 cup butter
  • 2 cups powdered sugar
  • 1/4 cup milk

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix vegetable oil, sugar, and vanilla extract until combined.
  3. In another bowl, whisk together flour, cocoa powder, baking soda, and salt; gradually add to wet ingredients.
  4. Squeeze excess moisture from shredded zucchini before folding it into the batter.
  5. Pour the mixture into the prepared pan and bake for 25 to 30 minutes or until springy to touch.
  6. For frosting, melt cocoa powder and butter; mix with powdered sugar and milk until smooth.
  7. Once brownies cool, spread frosting evenly over the top before cutting into squares.
