  • 2 habanero peppers (stems and seeds removed)
  • 1 inch piece fresh ginger (peeled and chopped)
  • 2 cloves garlic (chopped)
  • 1 tablespoon allspice
  • 2 teaspoons dried thyme
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon ground black pepper
  • 8 bone-in chicken thighs

Instructions

  1. Prepare the marinade by blending the vanilla extract, lime juice, onion, habanero peppers, ginger, garlic, allspice, salt, and pepper until smooth.
  2. Place chicken thighs in a casserole pan and cover with marinade. Ensure they are evenly coated. Cover and refrigerate for at least 8 hours or overnight.
