  • ½ teaspoon vanilla extract
  • Juice and zest of one lemon
  • ¼ cup granulated sugar (for glaze)
  • Juice of half of a lemon (for glaze)
  • 2 Tablespoons warm water (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your loaf pan by greasing it or lining it with parchment paper.
  2. In a mixing bowl, whisk together flour, sugar, baking soda, and salt.
  3. In another bowl, combine milk, melted butter, egg, vanilla extract, lemon juice, and lemon zest until smooth.
  4. Pour the wet ingredients into the dry mixture and gently fold in the chopped strawberries until just combined.
  5. Transfer the batter to the prepared loaf pan and bake for about 60 minutes or until a toothpick inserted comes out clean.
  6. Allow cooling in the pan for 10 minutes before transferring to a cooling rack. Drizzle with glaze made from sugar, lemon juice, and warm water before serving.
