  • 12 lasagna noodles
  • 10 oz frozen spinach (thawed)
  • 15 oz ricotta cheese
  • 2.5 cups shredded mozzarella cheese
  • 28 oz canned crushed tomatoes
  • 1 medium onion (diced)
  • 3 garlic cloves (minced)
  • 1 tablespoon olive oil
  • 3 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 2 teaspoons dried parsley
  • Salt and pepper (to taste)

Instructions

  1. For the tomato sauce: In a medium saucepan, heat olive oil over medium heat. Sauté diced onions until translucent. Add crushed tomatoes, minced garlic, dried herbs, salt, and pepper. Simmer for at least 20 minutes.
  2. Cook lasagna noodles according to package directions until al dente. Drain and let cool.
  3. In a mixing bowl, combine thawed spinach, ricotta cheese, 1.5 cups mozzarella cheese, parmesan cheese, and egg until well mixed.
  4. Lay out each noodle flat and spread about ¼ cup of filling evenly along each noodle before rolling them up.
  5. Pour some tomato sauce into a baking dish and place roll-ups seam-side down. Cover with remaining sauce and top with remaining mozzarella cheese.
  6. Bake at 375°F for about 25 minutes or until bubbly.
