  • 2 teaspoons vegetable oil
  • 2 teaspoons granulated garlic
  • 2 teaspoons chili powder
  • ½ teaspoon onion powder
  • ½ teaspoon coriander
  • 1 teaspoon kosher salt
  • 1 teaspoon cumin
  • ½ teaspoon chipotle chili powder
  • ½ cup honey
  • 1 tablespoon cider vinegar

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine all spice rub ingredients.
  3. Pat chicken thighs dry and rub the spice mixture evenly over each piece.
  4. Heat vegetable oil in a skillet over medium heat and sear the chicken for 3-4 minutes on each side until browned.
  5. In a small bowl, whisk together honey and cider vinegar for the glaze.
  6. Place seared chicken on a baking sheet, brush half of the glaze over it, and bake for about 15 minutes until cooked through.
  7. Remove from oven and brush with remaining glaze before serving hot.
