  • 1 cup semi-sweet chocolate chips (for drizzle)
  • 1 tablespoon coconut oil

Instructions

  1. Melt butter in a nonstick pan over medium-low heat. Add mini vegan marshmallows and stir until smooth.
  2. Remove from heat and fold in crispy rice cereal and crushed graham crackers until combined.
  3. Transfer mixture to greased parchment paper and press into a ½-inch thick rectangle.
  4. Spread chocolate spread over the layer and sprinkle remaining mini vegan marshmallows on top.
  5. Carefully roll tightly using parchment paper for guidance.
  6. Wrap rolled treat in parchment paper and refrigerate for 30–45 minutes until firm.
