  • 3/4 cup fine graham cracker crumbs

  • 1/4 cup honey
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 3/4 cup mini chocolate chips
  • 1/2 cup mini vegan marshmallows
  • 1 coarsely chopped chocolate bar (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a loaf pan with parchment paper.
  2. In a large bowl, whisk together flour, graham cracker crumbs, baking powder, baking soda, and salt. Set aside.
  3. In a stand mixer bowl, beat softened butter and brown sugar until light and fluffy.
  4. Add honey, eggs one at a time, vanilla extract, and sour cream to the creamed mixture; mix until well combined.
  5. Gradually add dry ingredients to the wet mixture until just combined; avoid overmixing.
  6. Gently fold in mini chocolate chips and vegan marshmallows before pouring the batter into the prepared loaf pan.
  7. Bake for about 50-60 minutes or until a toothpick inserted comes out clean with a few moist crumbs.
  8. Allow cooling completely in the pan before slicing.
