  • 3 tbsp granulated sugar
  • 1 large egg room temperature
  • 3 tbsp unsalted butter softened

  • 1 cup shelled unsalted pistachios
  • 1/4 cup granulated sugar
  • 3 tbsp unsalted butter softened
  • 1 tsp ground cinnamon
  • 2 tbsp heavy cream
  • 1/2 tsp pure vanilla extract
  • 4 oz cream cheese softened
  • 1 cup powdered sugar sifted
  • 23 tbsp whole milk or heavy cream
  • 2 tbsp pistachio paste or finely ground pistachios
  • 1/2 tsp pure vanilla extract
  • Pinch of salt
  • 1/4 cup roughly chopped pistachios

Instructions

  1. Prepare the dough by mixing warm milk, sugar, and yeast (if using active dry yeast) until frothy. Combine flour, salt, egg, and yeast mixture in a stand mixer; knead until smooth.
  2. Allow the dough to rise in a warm place until doubled in size (1–1.5 hours).
  3. For the filling, process pistachios into a fine paste and mix with sugar, butter, cinnamon, cream, and vanilla.
  4. Roll out the dough into a rectangle, spread the pistachio filling evenly, and roll up tightly. Cut into six rolls.
  5. Place in a greased baking pan and let rise again until puffy (45–60 mins).
  6. Bake at 350°F for 22–26 minutes until golden brown.
  7. While warm, frost with cream cheese frosting made from beating together cream cheese, powdered sugar, and milk.
