  • ½ cup rolled oats
  • 1 cup water
  • 2 tablespoons Parmesan cheese
  • 1 tablespoon olive oil (divided)
  • 1 small shallot, thinly sliced
  • 4 ounces mushrooms, halved
  • 4 ounces baby spinach
  • 1 large egg
  • Chives for garnish

Instructions

  1. In a saucepan, combine rolled oats, water, and a pinch of salt. Bring to a boil over medium heat, then reduce heat and simmer for about 5 minutes until tender. Stir in Parmesan cheese and set aside.
  2. In a frying pan, heat ½ tablespoon olive oil over medium heat. Sauté sliced shallots until translucent (2-3 minutes), then add mushrooms and cook until browned (4-5 minutes). Add baby spinach and cook until wilted.
  3. In another pan, heat remaining olive oil and fry the egg until whites are set but yolk remains runny.
  4. Serve creamy Parmesan oatmeal in a bowl topped with sautéed vegetables and the fried egg. Garnish with chives.
