Ingredients

Scale
  • 5 oz white chocolate, coarsely chopped
  • 1/3 cup unsalted butter, cut into small pieces
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup plus 2 tablespoons all-purpose flour
  • ¼ teaspoon salt
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 350°F (180°C) and prepare an 8×8-inch baking pan by lining it with foil.
  2. In a medium heat-proof bowl over simmering water, melt the white chocolate and butter together until smooth. Transfer to a large bowl.
  3. Stir in the granulated sugar until combined, then add the eggs one at a time, followed by the vanilla extract.
  4. Sift in the flour and salt, gently folding until just combined. Carefully fold in the fresh raspberries.
  5. Pour the batter into the prepared pan and smooth it out. Bake for 17-20 minutes or until golden brown; a toothpick should come out with moist crumbs.
  6. Allow to cool completely on a wire rack before lifting out and cutting into squares.
