  • 350g pumpkin, peeled and diced
  • 400ml vegetable stock
  • 500g gnocchi
  • 50g blue cheese or soft goat’s cheese
  • ¼ cup single dairy cream
  • 50g mozzarella or cheddar cheese
  • 6g sage leaves
  • 30g pecans

Instructions

  1. In a saucepan, combine the diced pumpkin and vegetable stock. Bring to a boil, then simmer until tender (10-15 minutes). Drain excess liquid.
  2. Preheat your oven to 200°C (390°F).
  3. In a mixing bowl, combine cooked pumpkin, gnocchi, blue cheese or goat's cheese, dairy cream, and half the mozzarella or cheddar. Stir gently.
  4. Transfer mixture to a baking dish; top with remaining mozzarella and chopped sage.
  5. Bake for about 20 minutes until golden brown and bubbling.
  6. Sprinkle toasted pecans on top before serving.
