  • 1 Tablespoon garlic powder
  • 2 Tablespoons salt
  • 1 Tablespoon ground black pepper

Instructions

  1. Remove the prime rib from the refrigerator 1-2 hours before cooking to reach room temperature.
  2. Mix together garlic powder, salt, and pepper; season all sides of the meat generously.
  3. Preheat your pellet grill to 225℉.
  4. Place the seasoned prime rib on the smoker grates bone side down and cook for approximately 35 minutes per pound (around 3-4 hours) until it reaches an internal temperature of 120℉ for rare or 130℉ for medium.
  5. Transfer to a cutting board, tent with aluminum foil, and let it rest for 20 minutes while raising the smoker temperature to 400℉.
  6. Return the roast to the smoker at 400℉ until it reaches desired doneness: around 130℉ for rare or up to 140℉ for medium.
  7. Allow to rest another 15 minutes before slicing.
