  • 1 box (3.4 oz) instant pistachio pudding mix
  • 6 tablespoons cold unsalted butter, diced
  • 1/4 teaspoon vanilla extract
  • 1 large egg
  • Chocolate (your choice: chips, wafers, chopped dark chocolate)
  • 2/3 cup heavy cream

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine flour, sugar, baking powder, salt, and pistachio pudding mix.
  3. Grate cold butter into the mixture until it resembles coarse crumbs.
  4. Make a well in the center and add vanilla extract, egg, and half of the cream; stir until combined.
  5. Knead dough lightly on a floured surface and shape into rectangles; fold in chocolate as desired.
  6. Cut into triangles and place on prepared baking sheet; brush tops with cream and sprinkle with coarse sugar.
  7. Bake for 13-15 minutes until golden brown.
