  • 1/2 cup chopped white chocolate
  • 1/2 cup chopped salted roasted pistachios
  • 1 cup pistachio cream spread

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream the unsalted butter with dark brown sugar until fluffy. Add the egg and vanilla extract; mix well.
  4. Gradually blend the dry ingredients into the wet mixture until just combined. Fold in the chopped white chocolate and pistachios.
  5. Scoop tablespoons of dough into a muffin tin, pressing slightly to create an indentation.
  6. Bake for about 14 minutes until golden around the edges. Let cool before removing from tin.
  7. Fill each cookie cup with pistachio cream spread and top with more chopped pistachios if desired.
