  • 1 tablespoon red apple vinegar
  • 3 teaspoons sugar
  • 1/4 teaspoon salt
  • Fresh ground black pepper
  • 1/4 cup half-and-half (or milk)
  • 2 teaspoons pickle juice

Instructions

  1. Cook the elbow macaroni in lightly salted boiling water until al dente. Drain and set aside.
  2. In a medium bowl, whisk together mayonnaise, vinegar, sugar, salt, pepper, milk, and pickle juice until smooth.
  3. In a large bowl, combine the cooked macaroni with three-quarters of the dressing mixture; mix well.
  4. Stir in roasted red peppers, diced pickles, sliced olives, and sweet onion. Add remaining dressing to reach desired creaminess.
  5. Drizzle additional pickle juice over the top if desired.
