  • 3.54 lbs boneless skinless chicken thighs
  • 1 cup pineapple juice
  • 1/2 cup low sodium soy sauce
  • 6 garlic cloves (minced)
  • 1 small onion (chopped)
  • 2 tbsp white apple vinegar
  • 2 tbsp brown sugar
  • 1 pineapple (cut into cubes)

Instructions

  1. In a mixing bowl, whisk together pineapple juice, soy sauce, minced garlic, chopped onion, white apple vinegar, and brown sugar until well combined.
  2. Cut chicken thighs into bite-sized pieces and add to the marinade. Cover and refrigerate for at least 30 minutes (up to 24 hours for more flavor).
  3. Preheat your grill over medium-high heat. Thread marinated chicken pieces and pineapple cubes onto skewers.
  4. Grill kebabs for about 15-20 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.
  5. Remove from the grill and let cool slightly before serving.
