  • 4 lb boneless rib eye roast
  • 14 oz beef broth (canned)
  • 2 tsp fresh thyme (chopped) or 1 tsp dried thyme
  • Salt
  • 2 tbsp pepper seasoning blend
  • 2 tbsp minced garlic

Instructions

  1. Preheat your oven to 350°F.
  2. In a small bowl, mix the pepper seasoning blend, minced garlic, and salt. Reserve 2 tablespoons for the au jus.
  3. Rub the remaining mixture onto the surface of the roast, scoring the fat cap for better flavor penetration.
  4. Place the roast fat side up in a shallow roasting pan and insert an ovenproof meat thermometer into the thickest part of the meat.
  5. Roast until the internal temperature reaches 120-125°F (about 120 minutes for medium-rare).
  6. Remove from oven and tent with foil; let rest for at least 20 minutes.
  7. In a saucepan, combine reserved rub and broth; bring to boil and simmer for 7 minutes.
  8. Slice the roast against the grain and serve with au jus.
