  • 1 egg
  • 2 tsp vanilla extract
  • 2 cups (260g) all-purpose flour

  • 1 tsp cornstarch
  • 1/2 tsp salt
  • 3/4 cup (125g) semi-sweet chocolate chips
  • 3/4 cup (146g) chopped candies (like M&Ms)
  • 23 tbsp red, white, and blue sprinkles
  • 1/2 cup (112g) salted butter
  • 1/2 cup (95g) shortening
  • 4 cups (460g) powdered sugar
  • 1 1/2 tsp vanilla extract
  • 23 tbsp water or milk
  • Red gel icing color
  • Sprinkles

Instructions

  1. Preheat your oven to 350°F (176°C) and spray a cupcake pan with non-stick cooking spray.
  2. In a large bowl, cream together unsalted butter, brown sugar, and sugar until fluffy (about 3-4 minutes).
  3. Mix in the egg and vanilla extract until well combined.
  4. In another bowl, combine flour, baking soda, cornstarch, and salt; gradually add to the butter mixture until a dough forms.
  5. Stir in chocolate chips, chopped candies, and sprinkles.
  6. Press about 2 tablespoons of dough into each cupcake cup to form a cup shape.
  7. Bake for 10-12 minutes or until edges are golden; cool before transferring.
  8. For frosting, beat salted butter and shortening; gradually mix in powdered sugar and vanilla extract until smooth.
  9. Color half of the frosting with red gel icing; pipe onto cooled cookie cups.
  10. Top with additional sprinkles.
