  • 1 pound elbow macaroni
  • 1 cup celery (chopped)
  • 1 carrot (grated)
  • 1/2 cup sweet onion (diced)
  • 4 hard-boiled eggs (divided, egg yolks and whites separated)
  • 4 tablespoons yellow mustard
  • 3/4 cup sugar
  • 1 cup Miracle Whip or mayonnaise
  • 1/2 cup evaporated milk
  • 1/3 cup vinegar (white or cider)
  • Kosher salt to taste

Instructions

  1. Cook the elbow macaroni according to package directions until tender. Reserve 1/4 cup of hot pasta water before draining.
  2. While the pasta cooks, separate the egg whites from the yolks of two hard-boiled eggs; dice the whites and set aside.
  3. In a bowl, mash the remaining yolks with mustard until blended. Add sugar, Miracle Whip or mayonnaise, evaporated milk, vinegar, and salt; mix until smooth.
  4. In a large bowl, combine cooled macaroni with celery, grated carrot, diced onion, and egg whites. Stir in the dressing until well mixed; add pasta water as needed for consistency.
  5. Cover and chill in the refrigerator for at least two hours or overnight before serving.
