  • 2 Tbsp (30 ml) unsweetened applesauce
  • 2 Tbsp (30 ml) maple syrup
  • 1 tsp vanilla extract
  • 1 cup (80 g) rolled oats
  • 1/4 cup (28 g) coconut flour
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground cardamom
  • 1/8 tsp ground ginger
  • 1/8 tsp ground nutmeg
  • 1 cup (115 g) shredded carrots
  • unsweetened shredded coconut for garnish

Instructions

  1. In a food processor, combine the pitted Medjool dates, dried apricots, unsweetened applesauce, maple syrup, and vanilla extract until well blended.
  2. Add rolled oats, coconut flour, ground spices, and shredded carrots to the mixture. Process until combined and sticky.
  3. Form small balls using a heaping tablespoon of the mixture and roll in unsweetened shredded coconut if desired.
