  • 2 large boneless, skinless chicken breasts
  • 8 cups romaine lettuce or spinach
  • 2 tomatoes
  • 1 cucumber
  • 1/2 red onion
  • 1 cup chickpeas
  • 2 Tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 1/4 cup mayo or plain Greek yogurt
  • 3 Tablespoons extra virgin olive oil
  • 2 Tablespoons balsamic vinegar
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon garlic salt
  • 1 Tablespoon pure maple syrup
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup chopped fresh parsley

Instructions

  1. Cook the chicken in olive oil over medium-high heat for 5-6 minutes per side until fully cooked. Allow to cool before slicing.
  2. In a bowl, whisk together mayo or Greek yogurt, extra virgin olive oil, balsamic vinegar, Italian seasoning, garlic salt, and maple syrup until smooth.
  3. In a large bowl, layer romaine lettuce followed by chickpeas, sliced chicken, tomatoes, cucumber, red onion, feta cheese, and parsley.
  4. Drizzle the dressing over the salad just before serving and toss gently to combine.
