  • 1 large sweet potato (peeled and cut into 1/2-inch cubes)
  • 1.5 tbsp olive oil
  • 3/4 tsp salt
  • 3/4 tsp cinnamon
  • 1/2 tsp cumin
  • 1 lb ground chicken
  • 1 cup ricotta
  • 1 egg
  • 1/2 cup panko
  • 1 shallot
  • 3 green onions
  • 3/4 cup cilantro
  • 1/2 cup dill
  • 1.5 lemon zest
  • 3/4 tsp salt
  • 3/4 tsp pepper
  • 2 tbsp olive oil
  • 1.25 cup yogurt
  • 1.5 cup basil
  • 3/4 cup dill
  • 1.5 lemon juice
  • 1.5 tbsp olive oil
  • 1.5 tbsp honey
  • 1 jalapeño
  • 3 cloves garlic
  • 4 cups kale

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine chickpeas with olive oil, salt, garlic powder, onion powder, and herbs de provence; spread on a baking sheet.
  3. Toss sweet potato cubes with olive oil, salt, cinnamon, and cumin before adding to the baking sheet.
  4. In a large bowl, mix ground chicken with ricotta cheese, egg, panko, lemon zest, shallot, green onions, cilantro, dill, salt, and pepper; form into meatballs.
  5. Bake all ingredients together on separate sheets for 20-25 minutes until golden brown.
  6. For the sauce: whisk yogurt with basil leaves, dill, lemon juice, olive oil, honey, minced jalapeño, pressed garlic cloves; season to taste.
  7. Assemble the bowl by layering kale as a base followed by roasted sweet potatoes and chickpeas topped with meatballs and sauce.
