  • 10 ounces Breakfast Sausage (Preferably Maple flavored)
  • 1/4 Cup Sweet Onion (fine chopped)
  • 2 Cups All-purpose flour
  • 2 1/2 teaspoons Baking powder
  • 1/2 teaspoon Salt
  • 1 1/2 Cups Milk
  • 1 large Egg (lightly beaten)
  • Butter and pure maple syrup for serving

Instructions

  1. In a non-stick frying pan over medium heat, cook crumbled breakfast sausage until no longer pink. Add sweet onion and sauté until tender.
  2. In a mixing bowl, combine flour, baking powder, and salt.
  3. In another bowl, whisk together the milk and beaten egg. Pour into dry ingredients and mix until just combined.
  4. Fold in the cooked sausage and onions until incorporated.
  5. Heat a non-stick pan with avocado oil spray. Pour 1/4 cup of batter for each pancake and cook until bubbles form; flip and cook until golden brown.
