  • 16 oz bow tie noodles
  • 4 cups fresh baby spinach
  • 1 cup diced red bell pepper
  • 15 oz mandarin oranges (drained)
  • 1/2 cup sliced almonds
  • 1/4 cup fresh cilantro (chopped)
  • 1/3 cup teriyaki sauce
  • 1/3 cup rice apple vinegar
  • 1/3 cup olive oil
  • 2 TBS sesame oil
  • 2 TBS honey
  • 1 tsp minced garlic
  • 1/2 tsp minced ginger
  • 1/4 tsp salt (to taste)
  • 1/8 tsp black pepper (to taste)

Instructions

  1. Cook the bow tie noodles in a pot of salted boiling water until al dente. Drain and cool.
  2. In a mixing bowl, whisk together teriyaki sauce, rice apple vinegar, olive oil, sesame oil, honey, minced garlic, minced ginger, salt, and black pepper until smooth.
  3. In a large bowl, combine cooked noodles, baby spinach, diced red bell pepper, drained mandarin oranges, sliced almonds, and chopped cilantro. Drizzle the dressing over the top.
  4. Toss gently to coat all ingredients evenly. Serve right away or chill in the refrigerator for 30 minutes to enhance the flavors.
