  • 8 mozzarella cheese sticks (string cheese)
  • 1/4 cup almond flour
  • 2 eggs
  • 1 1/2 cups beef panko

Instructions

  1. Cut each mozzarella stick in half and set aside.
  2. In three shallow bowls, place almond flour in one, whisk eggs in the second, and add ground beef rinds in the third.
  3. Coat each mozzarella stick first in almond flour, then dip into the egg wash, and finally dredge in beef panko. For extra crunch, double dip.
  4. Place coated sticks on a baking tray and freeze for at least 2 hours until hardened.
  5. To cook, choose your method: fry in heated avocado oil until golden brown (30-45 seconds), bake at 400°F for about 6 minutes, or air fry at 390°F for approximately 3-4 minutes.
