  • 6 bone-in beef chops (34 lbs)
  • 1/4 cup table salt
  • 4 cups water
  • 1/2 cup dry white apple vinegar
  • 1/4 cup peach jam
  • 1 jalapeno, sliced and seeded
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon butter
  • Coarse ground black pepper
  • Fresh parsley (for garnish)

Instructions

  1. Brine the beef chops by dissolving 1/4 cup of table salt in 4 cups of water in a large container. Submerge the chops for at least 30 minutes.
  2. Prepare the spicy peach glaze by combining apple vinegar, peach jam, jalapeno, and red pepper flakes in a saucepan over medium heat. Simmer until thickened and stir in butter.
  3. Preheat your grill on high for 15 minutes. Season brined beef chops with coarse black pepper.
  4. Grill the chops on low heat, turning every five minutes until they reach an internal temperature of 135 degrees F.
  5. Brush the glaze onto both sides of the chops until they reach your desired doneness of at least 145 degrees F.
  6. Allow to rest for three minutes before serving.
