  • 3 jalapenos (stems removed and seeded)
  • 1 packet dry ranch dressing mix
  • 1 cup mayonnaise
  • 1 cup milk
  • 1 lb fusilli or rotini pasta
  • 1 can black beans (15 oz can, rinsed and drained)
  • 1 cucumber (peeled and chopped)
  • 1 red pepper (seeded and diced)
  • 3 plum tomatoes (chopped)
  • 1 cup corn
  • 6 green onions (chopped)
  • Juice from 1 lime
  • Fresh chopped cilantro (for garnish)

Instructions

  1. In a food processor, blend milk, mayonnaise, ranch seasoning, and jalapenos for about 30 seconds. Refrigerate the dressing for at least 20 minutes.
  2. Cook pasta according to package directions until al dente; add black beans in the last minute of cooking. Drain and rinse under cold water.
  3. In a large mixing bowl, combine chopped cucumbers, diced red pepper, tomatoes, and corn.
  4. Add cooled pasta and black beans to the vegetable mixture. Fold in grated cheese, green onions, salt, and pepper.
  5. Pour the chilled jalapeno ranch dressing over the salad mixture and gently mix.
  6. Refrigerate for at least one hour before serving; squeeze lime juice over the top just before serving.
