  • 45 pounds beef shoulder butt
  • 1 large sweet onion (chopped)
  • 3 cloves garlic (chopped)
  • 2 limes (juiced)
  • 2 large oranges (juiced)
  • 1/2 cup beef broth
  • 1 tablespoon dried oregano (preferably Mexican oregano)
  • 1 tablespoon ground cumin
  • 1 tablespoon achiote paste
  • 1 teaspoon New Mexico red chile powder (or ancho)
  • 3 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon neutral oil (canola or vegetable oil)
  • Soft corn or flour tortillas (5 – 5 1/2" tortillas)

Instructions

  1. Whisk together spices and citrus juices in a bowl.
  2. Cut beef into chunks, season with salt and pepper.
  3. Sear beef in a frying pan until browned on all sides.
  4. Place seared beef in Instant Pot with sauce mix; pressure cook for 25 minutes.
  5. Shred beef once cooled; toss with some cooking sauce.
  6. Broil shredded beef to add crispiness.
  7. Assemble tacos with shredded beef and desired toppings.
