  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1/4 cup honey (or maple syrup)
  • 3 cloves fresh garlic
  • 1 teaspoon smoked paprika
  • 2 medium sweet potatoes
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, whisk together olive oil, soy sauce, honey, minced garlic, smoked paprika, salt, and pepper.
  3. Marinate the chicken in half of the marinade for at least 15 minutes.
  4. While marinating, peel and cube sweet potatoes; toss them with the remaining marinade.
  5. Spread marinated chicken and sweet potatoes on a parchment-lined baking sheet in a single layer.
  6. Bake for about 25–30 minutes until chicken reaches an internal temperature of 165°F (75°C) and sweet potatoes are tender.
  7. Allow to cool slightly before serving.
