  • 2 tsp sugar (optional if using instant yeast)
  • 1 packet active dry yeast
  • 2 cups bread flour
  • 2 cups all-purpose flour
  • 2 tsp salt
  • 6 tbsp olive oil (divided)
  • 1 jar raspberry preserves (or other jams)
  • 2 cups confectioners’ sugar
  • 24 tbsp whole milk (as needed)

Instructions

  1. In a mixing bowl, combine warm water and sugar. Sprinkle active dry yeast on top and let sit for about 10 minutes until bubbly.
  2. In another bowl, mix bread flour, all-purpose flour, and salt. Make a well in the center; add olive oil and yeast mixture.
  3. Stir until a dough forms; knead on a floured surface for about 5-7 minutes until smooth.
  4. Place the dough in an oiled bowl, cover with plastic wrap, and let rise in a warm place until doubled in size (about 1 hour).
  5. Preheat oven to 375°F (190°C). Punch down the risen dough and transfer it to a greased baking sheet; stretch evenly.
  6. Create small indentations across the surface; spoon raspberry preserves into each indentation.
  7. Cover again with plastic wrap and let rise for another 30 minutes.
  8. Drizzle remaining olive oil over the top and bake for about 22 minutes or until golden brown.
  9. Mix confectioners’ sugar with whole milk to create glaze; drizzle over warm focaccia before slicing.
