  • 1 lb Ground lamb (Preferably lamb, but beef or turkey can be used.)
  • 1 small Minced onion
  • 2 cloves Garlic
  • 1 large Egg
  • 1/2 cup Feta cheese (Finely crumbled.)
  • 2 tbsp Greek seasoning
  • to taste Salt
  • 1 large European cucumber (Peeled, grated, and drained.)
  • 1 cup Plain yogurt (Use Greek yogurt.)
  • 2 tbsp Chopped fresh mint (Optional for extra freshness.)
  • 2 tbsp Chopped fresh dill
  • to taste Freshly ground black pepper
  • 2 cups Cooked rice (White or brown, cooked.)
  • 1/2 juiced Lemon
  • 1 cup Tomatoes (Diced.)
  • 1 cup Diced cucumber (Drained.)

Instructions

  1. In a mixing bowl, combine the ground lamb, minced onion, minced garlic, egg, crumbled feta cheese, Greek seasoning, and salt.
  2. Mix until all ingredients are well incorporated.
  3. Form the mixture into small meatballs and place them on a baking sheet.
  4. Preheat your oven to 400°F (200°C).
  5. Bake the meatballs for about 15 minutes or until they are cooked through and golden brown.
  6. In another mixing bowl, combine grated cucumber with plain yogurt.
  7. Stir in chopped mint, dill, garlic, salt, and black pepper.
  8. Mix well until smooth; refrigerate until ready to serve.
  9. In a saucepan over medium heat, combine cooked rice with freshly squeezed lemon juice and salt.
  10. Stir gently until heated through; set aside.
  11. Assemble bowls starting with lemon rice, topped with meatballs, tzatziki sauce, and cucumber salad.
