  • 2 Tablespoons Kosher salt
  • 1 pound Cavatappi pasta
  • 1 quart milk
  • 8 tablespoons unsalted butter
  • 1/2 cup all-purpose flour
  • 12 ounces Gruyere cheese (grated)
  • 8 ounces extra-sharp Cheddar cheese (grated)
  • 1/2 teaspoon freshly ground black pepper
  • Salt to taste
  • 1/2 teaspoon ground nutmeg
  • 3/4 pound fresh tomatoes (sliced)
  • 1 1/2 cups fresh white bread crumbs

Instructions

  1. Preheat your oven to 375°F.
  2. Boil salted water in a large pot, add pasta, and cook until just under al dente (about 8 minutes). Drain, reserving 1/2 cup pasta water.
  3. In a small saucepan, gently heat the milk over low heat until warm.
  4. In the large pot, melt 6 tablespoons of butter over low heat. Whisk in flour for about 2 minutes to form a roux. Gradually add warmed milk while whisking until thickened.
  5. Stir in grated cheeses, salt, black pepper, and nutmeg until melted. Fold in cooked pasta and reserved pasta water.
  6. Pour mixture into a greased baking dish. Top with sliced tomatoes and breadcrumbs mixed with remaining butter.
  7. Bake for 30-35 minutes until bubbly and golden brown.
