  • 4 swordfish steaks (46 ounces each)
  • 1/4 cup olive oil
  • 1 1/2 tablespoons honey
  • 1 teaspoon lemon zest
  • 2 teaspoons fresh parsley (chopped)
  • 2 teaspoons fresh thyme leaves
  • 3/4 teaspoon minced garlic
  • Kosher salt and black pepper to taste
  • Lemon wedges for serving

Instructions

  1. In a mixing bowl or resealable bag, whisk together olive oil, honey, lemon zest, parsley, thyme, salt, and pepper until well combined.
  2. Reserve 1 tablespoon of the marinade and mix the minced garlic into the remaining marinade.
  3. Add swordfish steaks to the marinade; seal the bag or cover the bowl. Marinate in the refrigerator for at least 30 minutes to up to 8 hours.
  4. Preheat your grill over medium-high heat. Remove swordfish from the marinade, scraping off excess bits.
  5. Grill steaks for 5-6 minutes on each side until opaque throughout.
  6. Brush reserved marinade over cooked fish before serving with lemon wedges.
