  • ¼ cup harissa paste
  • 2 tablespoons extra-virgin olive oil
  • 2 large garlic cloves (grated or minced)
  • 1 lemon (zested and juiced)
  • Kosher salt
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • ¼ teaspoon coriander
  • ¼ teaspoon cinnamon
  • Black pepper
  • Fresh dill (for garnish)

Instructions

  1. Pat the chicken thighs dry and generously season with kosher salt.
  2. In a mixing bowl, combine harissa paste, olive oil, garlic, lemon juice, lemon zest, paprika, cumin, coriander, cinnamon, and black pepper.
  3. Add the chicken to the marinade and toss until well coated. Marinate for at least 15 minutes or up to 1 hour.
  4. Preheat the grill or grill pan over medium-high heat.
  5. Grill the chicken for 7-10 minutes on each side until slightly charred and cooked through (internal temperature of 165°F).
