  • 1 pound lean ground beef
  • 1/3 cup panko breadcrumbs
  • 1/4 cup chopped flat leaf parsley
  • 3 tablespoons grated onion
  • 1 clove garlic (grated)
  • Zest and juice of 1 lemon
  • 1 egg
  • 2 ounces feta cheese (crumbled)
  • For Tzatziki: 1 cup shredded cucumber, 1 1/2 cups plain Greek yogurt, juice of half a lemon, fresh dill

Instructions

  1. Preheat your oven to 450°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine panko breadcrumbs, parsley, grated onion, garlic, lemon zest and juice, egg, oregano, coriander, cumin, cinnamon, salt and pepper. Add crumbled feta and mix well.
  3. Gently fold in the ground beef until just combined. Shape into tablespoon-sized meatballs and place on the baking sheet.
  4. Lightly spray the tops with olive oil and bake for 10–12 minutes until golden brown.
  5. For tzatziki sauce: In another bowl, mix shredded cucumber, yogurt, lemon juice, dill, garlic (or garlic powder), salt and pepper.
  6. Serve warm meatballs alongside tzatziki sauce for dipping.
