  • 2 boneless skinless chicken breasts
  • 1 lemon (juiced)
  • 2 garlic cloves (minced)
  • 1 tsp oregano
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 a seedless English cucumber (peeled)
  • 1 tsp sea salt (or more to taste)
  • 2 cups plain Greek yogurt
  • 3 cloves garlic (peeled and mashed into a paste)
  • 1/3 cup olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp fresh dill (minced)
  • 1 cup warm water (about 110 degrees)
  • 1 tsp active dry yeast
  • 3 cups all-purpose flour (plus more for surface and hands)
  • 3 tbsp extra-virgin olive oil (plus more for bowl)
  • 2 tsp coarse salt
  • Oil to brush on the dough before cooking
  • 1 large onion (sliced)
  • 300 g baby spinach (a small rectangle container)
  • 1 cup feta cheese
  • Salt and pepper to taste

Instructions

  1. Begin by marinating the chicken in lemon juice, minced garlic, oregano, olive oil, and salt for at least 30 minutes.
  2. While the chicken marinates, prepare tzatziki by grating cucumber and mixing it with Greek yogurt, mashed garlic paste, olive oil, vinegar, dill, and salt. Refrigerate.
  3. For the flatbread dough, combine warm water and yeast until frothy. Mix in flour and salt; knead until smooth. Let rise until doubled in size.
  4. Cook marinated chicken in a skillet until fully cooked through. Slice into strips.
  5. Roll out dough into circles and cook each flatbread on a skillet until golden brown.
  6. Assemble by spreading tzatziki on flatbreads and topping with chicken, sautéed onions, spinach, feta cheese.
