  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground oregano
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup finely diced red onion
  • 4 cloves garlic, finely minced
  • 1/2 teaspoon lemon zest
  • 1 tablespoon olive oil, for frying
  • Chopped romaine
  • Feta cheese
  • Cucumber slices
  • Tomato slices
  • White rice
  • Tzatziki sauce

Instructions

  1. In a mixing bowl, combine ground chicken, salt, black pepper, cumin, oregano, red pepper flakes, chopped dill, chopped mint, diced onion, minced garlic, and lemon zest. Mix until well combined.
  2. Using a cookie dough scoop or tablespoon, form the mixture into meatballs.
  3. Heat olive oil in a large skillet over medium heat. Cook meatballs for 3–4 minutes on each side until browned and cooked through (internal temperature should reach 165°F).
  4. Serve meatballs on a bed of romaine lettuce topped with feta cheese and slices of cucumber and tomato alongside tzatziki sauce.
