  • ¾ cup buttermilk (or dairy-free alternative)
  • 2 large eggs (whisked)
  • 1 cup fresh or frozen blueberries
  • 2 tbsp milk (for brushing)
  • 1 cup confectioners' sugar (for glaze)
  • 1 tbsp lemon juice (for glaze)
  • ½ tsp pure vanilla extract (for glaze)
  • 1 tbsp water (for glaze)

Instructions

  1. Preheat oven to 425°F (218°C) and line a baking sheet with parchment paper.
  2. Chill diced butter in the freezer for about 10 minutes. Prepare buttermilk if necessary.
  3. In a large bowl, mix gluten-free flour, xanthan gum, sugar, baking powder, salt, and dried lemon peel.
  4. Cut chilled butter into the dry mixture until it resembles small peas.
