  • 1/3 cup granulated sugar
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons cornstarch
  • 1/2 teaspoon vanilla extract
  • Pinch of kosher salt

Instructions

  1. Prepare the strawberries by slicing or dicing them, setting aside one-third for later use.
  2. In a saucepan, combine two-thirds of the strawberries with granulated sugar.
  3. In a small bowl, whisk together lemon juice, cornstarch, vanilla extract, and salt until smooth.
  4. Add the slurry to the strawberry mixture in the saucepan.
  5. Heat over medium heat until boiling, then reduce heat and stir continuously for 4-5 minutes until thickened.
  6. Stir in the remaining strawberries and coat well with the sauce.
  7. Allow to cool before transferring to an airtight container or jar; chill until cold.
