  • 4 large mixed-color bell peppers
  • 2 cups cooked rice
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the rice according to package instructions until fluffy.
  3. In a large pot over medium heat, add olive oil. Once hot, sauté the chopped onion and minced garlic until soft (about 3-5 minutes).
  4. In a mixing bowl, combine the sautéed onion and garlic with the cooked rice. Add cherry tomatoes, olives, parsley, oregano, salt, pepper, and lemon juice; mix well.
  5. Cut the tops off the bell peppers and remove seeds. Fill each pepper generously with the rice mixture.
  6. Place stuffed peppers upright in a baking dish. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until tender.
