  • 16 ounces rotini pasta
  • 1 cup chopped turkey turkey turkey pepperoni
  • 10 ounces cherry tomatoes, finely chopped
  • 1 small red onion, finely chopped
  • 1 medium jalapeno pepper, seeded and finely chopped
  • 1 red bell pepper, seeded and finely chopped
  • 1 orange bell pepper, seeded and finely chopped
  • 1 yellow bell pepper, seeded and finely chopped
  • 15 ounces black beans, drained and rinsed
  • 15.25 ounces yellow corn, drained
  • 11 ounces white corn, drained
  • Italian vinaigrette dressing

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and cool.
  2. In a large mixing bowl, combine the cooled pasta with chopped turkey pepperoni, cherry tomatoes, red onion, jalapeno pepper, mixed bell peppers, black beans, yellow corn, and white corn.
  3. Drizzle up to 1 cup of Italian vinaigrette over the mixture. Start with less dressing; you can add more later if desired. Mix thoroughly to combine all ingredients evenly. Season with salt to taste.
  4. Refrigerate the salad until ready to serve to enhance flavors.
