  • 1 1/2 cups whole milk, at room temperature
  • 3 large eggs, at room temperature
  • 1 tablespoon salted butter, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 4 ounces cream cheese, cut into cubes
  • 1 teaspoon kosher salt
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat your oven to 450°F and position a rack in the lower third. Grease a popover pan or muffin tin with butter.
  2. Melt the butter in the pan for about 3-5 minutes until hot.
  3. In a medium bowl, whisk together milk and eggs until frothy. Add melted butter, vanilla extract, flour, and salt; mix until combined.
  4. Fill each cup of the hot pan three-quarters full with batter. Add a cube of cream cheese to each popover if desired.
  5. Bake for 20 minutes at 450°F, then reduce the temperature to 350°F and bake an additional 15-18 minutes until golden brown.
  6. In a skillet over medium heat, brown remaining butter for about 3-4 minutes and set aside.
