Instructions

  1. Preheat oven to 350°F (175°C). Prepare a 9-inch springform pan.
  2. For the crust, mix flour, baking soda, and salt in one bowl. In another, cream together butter, brown sugar, white sugar, and vanilla until smooth. Add the egg and combine. Gradually add dry ingredients and stir in chocolate chips. Press into the bottom of the prepared pan and bake for 10 minutes.
  3. For the edible cookie dough, mix heat-treated flour and salt in one bowl. Cream butter, sugars, and vanilla in another bowl; gradually add milk until smooth. Fold in chocolate chips.
  4. For the cheesecake filling, beat cream cheese until smooth; mix in sugar, sour cream, heavy cream, and vanilla. Incorporate eggs one at a time gently; stir in mini chocolate chips.
  5. Assemble layers by pouring half of cheesecake filling over cooled crust, dropping spoonfuls of cookie dough on top, then pouring remaining filling over.
  6. Bake for about 60 minutes until slightly jiggly in the center. Cool gradually in the oven before chilling for at least 4 hours.
