  • 1 pound cooked chicken breast (cubed or shredded)
  • 1 pound dry pasta (such as shells or elbow)
  • 10-ounce can evaporated milk
  • 4 tablespoons butter (room temperature)
  • 8 ounces pepper jack cheese (cubed)
  • 8 ounces Velveeta cheese (cubed)
  • 1 teaspoon ground mustard powder
  • 1 chipotle pepper in adobo sauce (finely chopped)
  • 1/2 teaspoon adobo sauce

Instructions

  1. Preheat oven to 350°F. Season chicken breast with salt and pepper in a baking dish and bake for 30 minutes until cooked. Once cooled, cube or shred.
  2. While chicken bakes, cube cheeses and let them come to room temperature.
  3. Cook pasta in a Dutch oven with just enough water to cover it for about 6 minutes until tender; do not drain.
  4. Stir in evaporated milk and butter to the pasta pot and bring to a simmer over medium heat.
