  • 2 tablespoons olive oil
  • 3 tablespoons fresh lime juice
  • 23 bell peppers (red, yellow, or orange)
  • 1 red onion
  • 2 tablespoons chopped cilantro
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon minced or grated garlic
  • 1 teaspoon hot sauce (such as Cholula)

Instructions

  1. Prepare the marinade by whisking together olive oil, lime juice, cilantro, chili powder, cumin, oregano, salt and pepper, garlic, and hot sauce.
  2. Combine the marinade with chicken in a freezer bag; seal and refrigerate for 1–2 hours.
  3. Toss bell peppers and onion with olive oil and spices in a large bowl.
  4. Preheat your grill to 400°F. Thread marinated chicken and vegetables onto skewers.
  5. Grill for about 10–12 minutes until chicken reaches an internal temperature of 165°F.
