  • 1 cup finely chopped yellow onion
  • 1 medium garlic clove, minced
  • 4 cups fresh or thawed corn kernels
  • 2/3 cup milk (dairy or plant-based)
  • 2 cups grated cheese (mild cheddar and fontina)
  • 3/4 cup panko breadcrumbs
  • 3 eggs
  • Salt and ground white pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a standard-sized pie plate.
  2. In a skillet over medium-high heat, melt butter and sauté onions until lightly browned. Add garlic and cook until fragrant.
  3. In a mixing bowl, combine sautéed onions and garlic with corn, milk, cheese, panko breadcrumbs, salt, white pepper, and eggs. Mix well.
  4. Pour the mixture into the prepared pie plate.
  5. For the topping, combine remaining butter with panko breadcrumbs and cheese; sprinkle over the filling.
