  • 1 1/2 cups mashed bananas (about 34 medium bananas)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground all spice
  • 1 cup shredded carrots
  • For the Frosting: 1/2 cup butter, softened
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 3/4 tsp ground cinnamon
  • 1/2 cup crushed pecans
  • 1/4 cup shredded carrots

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two loaf pans.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  3. Stir in mashed bananas and vanilla extract until combined.
  4. In another bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, ginger, and all spice.
  5. Gradually add dry ingredients to wet ingredients; mix until just combined. Fold in shredded carrots gently.
  6. Divide batter evenly between prepared loaf pans and smooth the tops.
  7. Bake for 35–40 minutes or until a toothpick inserted into the center comes out clean. Cool before frosting.
