  • 1½ cups plain Greek yogurt
  • 1 tablespoon honey or maple syrup
  • ½ teaspoon vanilla extract
  • ¾ cup fresh or frozen blueberries
  • 1 teaspoon lemon juice

Instructions

  1. Prepare the blueberry compote by heating blueberries and lemon juice in a small saucepan over medium heat for 5-6 minutes until softened. Mash lightly for a jam-like consistency. Let cool.
  2. In a medium bowl, whisk together Greek yogurt, vanilla extract, and honey until smooth.
  3. Spoon about 1 tablespoon of the yogurt mixture into each cavity of a silicone mini muffin tray.
  4. Top each yogurt portion with about ½ teaspoon of cooled blueberry compote and gently swirl.
  5. Freeze for at least 2 hours or until firm.
  6. Carefully remove from molds and store in an airtight container in the freezer.
